What is Kohlrabi?

What can I do with it?

First, remove the outer skin of the bulb with a veggie peeler or paring knife. Then...

Eat it raw!

Grate it into a salad, or cut into thin slices and drizzle with extra virgin olive oil and sea salt for a cool summer snack. Out in the field, we eat them like apples.

Cook it!

Put it on the grill or in the oven with your other roasted veggies (do I see carrots and potatoes in your box?).

Fry them as fritters--grate, add egg, season, and fry in a skillet! Here is a good recipe.

Cook and mash it with your potatoes, or purée it into soups.

Save the greens! They sauté well with oil and garlic.
